I could not choose just one for the life of me - I'd love to see all of these so very much! I realize that's clearly asking a lot, but... maybe over the course of the next year/year and a half, it would be possible to do all three events? (And more prompt tables would be fairly awesome too...)
More like you're not that crazy. Trying to pull off ALL that in less than a year's time is asking for a nervous breakdown. LOL! Actually - maybe you ARE that crazy...
I personally tend to do better with Fic Exchanges because there's some onus on my finishing since someone is expecting a fic at the end of it. But I also see the downside to that with this type of community, because some pairings can be quite challenging, ala Firenze/Snape. They can also be quite time consuming and too many of them can burn writers out. If this option is chosen, maybe only do it once a year?
As for my second selection, I think it's a good way for members to participate without the pressure that normally comes with doing a fic exchange. They can participate when they want, however often they want. And it poses its own challenge in a way (e.g. writing every single prompt in a table regardless if the last word is xylophone).
The Fic exchange that has run here in the past has always been a favorite (it actually challenges me to write something non-smutty since the highest allowed rating is an R) and to be brief since there's a max word count.
Just speaking personally, I'm much more motivated to finish things when it's an exchange or fest and there's a deadline and someone depending on me; I have a hard time kicking myself into gear otherwise.

I remember there was a wishlist even one year in the summer on a diff comm and I think there may have been one here. Anyways, those are fun, it's almost like a prompt fest but a little more lose. Also, if you give incentives, like making a special banner or something for the person who fills the most wishes, that would be cool. I know it worked in the comm that did the wishlist event that one summer.
Rarepair-themed reversathon or ownficfest-style challenge. Authors would offer prompts they want to write (on pairings separate from their regular prompt table), and recipients could pick which they wanted to receive.
I picked three, but if I had to pick just one, I'd say new prompt tables. I think the reason I'm having such a hard time with mine is that - while the tables we had were fun, I just can't seem to get inspired by them. Could be my fault, of course - no one ELSE is having that problem, so I'm pretty sure it's just me. But - new prompt tables would allow us ALL to revisit our favorite rare pairs and play some more, yes?
I enjoyed the wishlist event quite a bit, I think it was held last summer? It pushed me to write two fics, without the pressure of having to finish something. I participated in the exchange in 2010 I think, and I enjoyed that too, but sometimes something lower pressure is nice.
